They Philippines is known for:
  • Beautiful Tropical Islands
  • Top Hospitality
  • Karaoke
… and Typhoons

Over the past three days we’ve been enjoying the effects of Typhoon Nona. I mean who doesn’t like 80 mile per hour gusts of wind along with bouts of heavy rain and of course… power outages.

So how do we prepare for Typhoon Nona? We go to the beach at sunset to Casa de Schaefer to enjoy his typhoon themed dinner party.

Malcolm and I are good friends and we are also international cargo pilots. Lately we have been assisting Santa Claus by moving various Christmas supplies and gifts around the globe. I think we are part of his Christmas Season staff. I like to think we are deputized elves.

Malcolm recently had the construction completed on palatial ‘Casa de Schaefer’ - his beautiful beach house. It is extremely beautiful plus it comes with an executive chef - Sir Harold. Harold was enticed to leave the #1 restaurant in Pueta Galera to be the personal chef and property manager of Casa de Schaefer. Harold, along with his lovely wife Bing and their 2 children can be seen daily on the island - I think they are searching for secret ingredients for the delicious meals he prepares. But tonight the preparations are complete, and Malcolm has invited us to be his inaugural guests for his first Typhoon Party.

As the sun is setting and the torches are lit, we approach his home at the last slice of sunset.

‘Hey Amigo, Welcome!’

Malcolm welcomes us to his estate with tropical beverages. ‘Sunsets are best when shared with friends with cocktails.’ All of us agree with a toast to the sunset.

Conversations lead to a tour of his estate and eventually to the dining area. Chef Harold greats us in uniform and serves us our first course ~ pan seared veal with an artistic Asian sauce. Everyone agrees it is delicious.

As the plates are cleared and the intensity of the wind increases, we are told of the next course. Lasagna with hand made pasta noodles served with an organic Asian salad and fresh garlic bread.

Fzzzzz… Pop!

… and the lights go out and the sky unloads it’s wrath.

‘Not to worry,’ Harold assures us, ‘I will start the generator.’  And minutes later, Casa de Schaefer is back online and the delicious dinner is served.

Clinking glasses, laughter and good conversation are all part of the evening.

‘We are going to have to do this again,’ Malcolm teases us, ‘But the next one will be Bigger! Mark your calendar ~ January 16th, 2016. Live Music, 3 roasted pigs, pina coladas and much more. Can you be here? Everyone is invited.’

‘We’ll be here!’

‘Like I said, everyone is invited ~ preferably girls... but I want this beach party packed and rocking.’

‘I think we can help get the word out. Don’t be surprised if you see over a thousand guests.’

With that we all exchange hugs and… Fzzzz! Pop!

‘Sir Malcolm, I think the generator is out. Maybe we can get a spare generator so this doesn’t happen at the party.’

‘Excellent idea! Nothing like a well stocked fridge, a generator, and some good help can't overcome!'

As you can see, surviving a typhoon in paradise is Like Winning the Lottery
